Orange Steak Sauce Ala Ndyw

Ingredients
1/2 cup orange juice
1/2 cup raisins
1/4 cup soy sauce
1/4 cup white vinegar
2 tablespoons Dijon mustard
1 tablespoon grated orange peel
2 tablespoons catsup
2 tablespoons chili sauce

Bring all ingredients to a boil, then boil for 2 minutes, stirring constantly. Remove from heat. Allow to cool to lukewarm. Pour mixture into a blender until it is pur

Hawaian Chicken with Penapple Ala Ndyw

Ingredients
1 cup white rice
1 tablespoon canola oil
2 tablespoons honey
2 tablespoon balsamic vinegar
1 tablespoon soy sauce
1 teaspoon Dijon-style mustard
4 boneless, skinless chicken breast halves
1 (20 ounce) can sliced pineapple in juice, pineapple
drained and 1 tablespoon juice reserved

Directions
Cook rice according to package directions. Preheat oven to 400 degrees F.

In small jar, combine reserved pineapple juice, oil, honey, vinegar, soy sauce and mustard; shake marinade well. Toss chicken with 3 tablespoons of marinade to coat, discarding chicken marinade when done.

Brush pineapple rings with other half of marinade, reserving leftover marinade.

Coat 2 large baking dishes with vegetable oil spray. Arrange chicken and pineapple rings in a single layer and bake for 8 to 10 minutes, until chicken's juices run clear. Before serving, brush chicken with leftover marinade and season with salt and pepper to taste.

Top rice with chicken and pineapple rings.

Almond Butter Chicken Ala Ndyw

Ingredients
4 boneless chicken breasts
1 cup all-purpose flour
2 teaspoons basil
1 teaspoon salt
1 teaspoon pepper
1/2 cup sliced almonds
3 cloves fresh diced garlic
1/4 cup (1/2 stick) butter
1/3 cup olive oil

Directions
Mix all dry items except the almonds in a large bowl, then lightly dust chicken breast in flour mixture.

Add oil to frying pan and lay in the chicken breast. Cover and cook for 20 minutes over medium heat until it is thoroughly cooked.

Once chicken is cooked, add butter, then garlic, and almonds last. Stir well.

Almond Apricot Bars Ala Ndyw

Ingredients
2/3 cup dried apricots
1 1/3 cups flour
1/4 cup granulated sugar
1/3 cup cold unsalted butter
1 cup sliced almonds, toasted and divided
2 large eggs
1 cup brown sugar, packed
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon grated lemon peel
1 tablespoon fresh lemon juice
1/2 teaspoon baking powder

Directions
Place apricots in small saucepan. Add just enough water to cover the apricots, bring to a boil, reduce heat and cook 10 minutes. Drain well and coarsely chop and set aside.

Blend 1 cup flour with granulated sugar. Cut in butter until crumbly. (I do this in a food processor - pulse a few times and that's it. Be careful not to over process.) Add 1/2 cup almonds and stir or pulse a few times to mix. Pat into an UNGREASED 9-inch square pan. Bake at 350 degrees F for 20 minutes.

Beat eggs and brown sugar. Add extracts, peel, lemon juice baking powder and the remaining 1/3 cup flour and stir to blend. Stir in chopped apricots Pour over partially baked crust. Sprinkle with remaining 1/2 cup almonds. Bake for 25 minutes more. Cool in pan on a rack. Cut into squares.

Apple Pie Ala Ndyw

Ingredients
1 cup sugar
2 tablespoons flour
1 unbaked pie shell
Gravenstein apples(slice it)
lemon Juice
cinnamon

Directions
Blend 1 cup sugar and 2 tablespoons flour. Place one-third of this mixture over the bottom of an unbaked pie shell. Fill heaping with sliced, pared Gravenstein apples. Sprinkle over this the juice of about one-quarter lemon. Pour the remaining sugar and flour mixture over the top. Sprinkle with cinnamon, and add a top crust. Bake at 450 degrees F for 20 minutes, then reduce heat to 350 degrees F and bake another 25 minutes.

Buffalo Wings Ala Alton Brown

Ingredients
12 whole chicken wings (about 3 pounds)
3 ounces (6 tablespoons) unsalted butter
1 small clove garlic, minced
1/4 cup hot sauce
Kosher salt

Directions
Place a 6-quart saucepan, with a steamer basket and 1 inch of water in the bottom, over high heat, cover and bring to a boil.

Remove the tips of the wings and discard or save for making stock. Use kitchen shears or a knife to separate the wings at the joint. Place the wings in the steamer basket, cover, reduce the heat to medium and steam 10 minutes. Remove the wings from the basket and carefully pat dry. Lay out the wings on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator to dry, about 1 hour.

Preheat the oven to 425 degrees F. Remove the paper towels on the pan and replace with parchment paper. Roast on the middle rack of the oven, about 20 minutes. Turn the wings over and cook 20 to 30 more minutes, or until the meat is cooked through and the skin is golden brown.

While the chicken is roasting, melt the butter in a small bowl with the garlic. Pour this along with the hot sauce and 1/2 teaspoon salt into a bowl large enough to hold all of the chicken and stir to combine. Remove the wings from the oven, transfer to the bowl and toss with the sauce. Serve warm.

ABC Sandwich Ala Pittman House Restaurant

Ingredients
1 cup mayonnaise
1/2 cup minced scallions
2 tablespoons brandy
1/4 teaspoon coarsely-ground black pepper
18 slices toasted whole-wheat bread
Leaf lettuce
12 ounces crabmeat, picked over well to remove any shells
Tomato slices
12 slices slab bacon, cut in half, cooked crisp and drained
2 avocados, sliced

Directions
In a small bowl, combine the mayonnaise, scallion and brandy, mixing well. For each sandwich, spread three pieces of bread with a portion of the mayonnaise mixture. Cover the first slice of bread with lettuce leaves, 2 ounces of crabmeat, and one or two tomato slices. Add the second slice of bread, and top with the four half-slices of bacon, a layer of avocado slices, another tomato slice or two, and more lettuce. Cover with the third slice of bread, secure the sandwich with wooden picks, if you like, and slice it in half.

Serve the sandwiches immediately.
